Carly initiates her new silicon muffin tray with one of those made in heaven combinations - banana and chocolate.

125g
softened butter
¾
cups sugar
2
eggs
1teaspoon
vanilla essence

½ cups mashed ripe bananas (4 medium bananas)
¾
cup dark chocolate buttons roughly chopped
1
teapsoon baking soda
2
tablespoons hot milk
2
cups flour
1
teaspoon baking powder
Preheat
oven to 180ºC. Grease muffin tray or line with patty pans.
Cream
butter and sugar together until light and fluffy.
Add
one egg at a time and beat well. Add vanilla essence, mashed banana and
chocolate chips and mix.
Stir
the baking soda into the hot milk and add to the mixture.
Sift
the flour and baking powder over and fold in to the mixture.
Spoon
mixture in to the muffin tray and bake for 15- 20mins or until risen and
golden. Leave to stand for 5 minutes then transfer muffins to a wire rack.
When
cool dust icing sugar over muffins.
A well-used muffin tray is a happy muffin tray!
