Welcome to Bake Club, Christoph, our second male baker! Christoph is from Germany and has been an intern at The Aucklander. He wrote a story about Bake Club in an upcoming issue. The pic shows the two remaining muffins (Christoph and his flatmate and ate 4 of them straightaway out of the hot tin ^^).

Christoph used the recipe from www.food.com, but modified it a bit.
Ingredients (for 12 serves):
1 orange, seeds removed, with peel
1/4 cup orange juice
1/2 cup coconut milk
1 egg
1/2 cup butter
2 cups wholemeal flour
1/2 cup unsweetened coconut, chop it into small pieces, that you get something to chew on afterwards :)
1 cup sugar
1/2 cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
3/4 cup dark chocolate chips

Directions:
Preheat the oven to 180 degrees Celsius and get ya hands on two muffin tins.
Chop the orange and place it in a blender, puree. Add the orange juice, egg and butter and blend it for a minute or so until it's creamy and smooth.
In another bowl, combine the coconut, sugar, baking powder/soda, cocoa powder and flour. Go and use your hands to kneat it until it's well mixed.
Fold in the blender contents and stir with a spoon/your hands. Then add the coconut milk. After the mixture looks cool, add the chocolate chips.
Scoop into muffin tins and bake for 15 minutes. After that lower the temperature every 3 minutes and let them cool down in the oven afterwards. DON'T put them straight in the fridge :)
