This is my entry into the NZ Airborne National Honey Week competition. I wanted to create a recipe that only uses a few ingredients so the honey could shine through. A no-flour, one-bowl wonder - VERY easy to make and scrummy!

Makes 16-20 cookies

1/3 c New Zealand honey (I used clover)
1 c peanut butter (Pic's is my preferred brand but any organic, salt-free, all natural one is good)
2 tbs cocoa powder
3/4 c chocolate drops

Preheat the oven to 180C. Soften or slightly melt the honey in a saucepan or microwave-proof bowl, take off the heat and mix in the cocoa powder. Add the peanut butter and chocolate drops and mix really well.
Use 2 teaspoons to scoop out a large teaspoon of mixture and drop onto a baking sheet. Flatten out slightly. The cookies don't spread so you can place close together; they should all fit on one sheet. You also don't need to oil the baking sheet as there's enough oil in the peanut butter.
Bake for 12-15 min or until cooked through and slightly browned underneath. Remove from the oven and allow to cool and harden up for 10 min, then transfer to a wire rack.
Thoroughly enjoyed by toddler, husband and niece!

I made another batch today, Thursday 19th. This time I added some chopped peanuts. They spread really well, really evenly, and were even more delicious than yesterday! Made 17 medium-sized cookies.
