I have an music video
edit session going on in our dining room – what can I feed two hungry media
types? Pre-rolled puff pastry to the rescue! Only three sheets left so I made
one pear and pecan tart and some spinach and cheese pinwheels.
For pear and pecan
tart: peel 3 pears, cut into slices and toss with handful of pecans, some brown
sugar, cinnamon, nutmeg, ginger. Spread evenly over pastry sheet, folding up
the edges. Baste with some melted honey; you could also brush pastry with
beaten egg. Bake for about 20-25 mins at 180 C.
You can use apple,
stone fruit – fresh or canned - or any kind of nuts for this quick sweet treat.
For spinach and cheese
pinwheels: steam a bag of spinach and sauté half a red onion with rosemary or any
herbs you like. Drain spinach and mix with onions and cup or grated cheese,
salt and pepper, nutmeg. This made about 2 cups of mixture. Spoon half onto a
sheet of pastry and roll up in a log. Cut into 1cm strips and place onto baking
sheet. Do the same for the other sheet. Sprinkle some grated parmesan on top.
Bake for about 20-25 mins at 180 C.
You can do savoury
swirls with broccoli, cream cheese and chives or pesto and walnuts – whatever
you have in your fridge.
