These are very similar to yoghurt scrolls but they have a standard yeasted dough recipe. This one is by Destitute Gourmet Sophie Gray from Fill the Tins. Her recipe included a sweet version which I didn't try this time.

Makes 24 scrolls

6 c flour
2 tsp salt
1 tsp sugar
2 tsp yeast
2 Tbs olive oil
2 1/2 c warm water

Mitey cheese filling
1 Tbs Vegemite (I prefer it to Marmite because it has no sugar)
1 Tbs butter or non-dairy spread
1 1/2 c grated cheese

Spicy custard and sultana filling
1 Tbs custard powder
1/2 Tbs sugar
3/4 c milk
1/3 c sultanas
1/3 c brown sugar, plus extra to sprinkle
1 tsp mixed spice
1 tsp cinnamon, plus extra to sprinkle
2 Tbs honey, warmed

In a large bowl combine all the dry dough ingredients. Stir in water and mix to form a dough. Turn out onto a floured surface and knead for 5-8 mins until smooth and elastic. Place dough in a greased bowl, cover with cling film and leave to rise until doubled in size.

Punch dough down, knead lightly and divide into 2 pieces. Roll each piece out to a rectangle approx 30cm x 20cm on a well floured surface.

Preheat the oven to 190C. Line 2 baking sheets with baking paper.

Combine the Vegemite and butter and spread onto one rectangle. Cover with cheese. Roll up from the long side to form a log. Cut into 12 even pieces and place with scrolls facing up on the baking sheet. Top each one with the remaining cheese. Allow to rise for 10 mins before baking.

While the dough is rising mix the custard powder with the sugar and 1/4 c of milk in a small saucepan on medium heat to form a smooth paste. Then whisk in the remaining milk, stirring all the time until custard is thick. Remove from heat and allow to cool.

Soak the sultanas in boiling water for 5 mins then drain and set aside.

Combine the brown sugar and spice.

Now work quickly to spread the roll-out dough with warmed honey, then add the cooled custard, keeping it well away form the edges. Sprinkle on the sugar and spice mix and the sultanas and pat down gently.

Roll up from the long end, cut into 12 even piece and place the scrolls facing up on the baking sheet. Sprinkle with a little extra brown sugar and cinnamon if you want.

If you don't want the custard you can just spread your dough with the spicy sultana mix and honey.
