Just the word 'molasses' conjures up deep, hearty flavour, and I really felt like a spiced biscuit with my coffee so I looked it up in the index of The Cookie Book and there was the recipe.

1/2 c / 250g butter
1 c sugar
1 egg
1/4 c molasses
2 1/2 c flour
2 tsp baking soda
1 tsp cinnamon
3/4 tsp ground cloves
3/4 tsp ground ginger
1/4 tsp salt

Preheat oven to 190C. Line baking sheets with baking paper.
Beat together the butter, sugar, egg and molasses>
Sift together the flour, soda, spices and salt. Add to the butter mixture and combine thoroughly. With lightly wetted hands, form the mixture into 1 inch/2.5cm balls and place them 2 inches/5cm apart on the baking sheets. I pressed them down a bit as I like crunchy cookies.
Bake for 10 mins or until brown. Transfer to wire rack to cool. Drizzle with icing made from lemon and icing sugar.

I will enter these cookies into Sweet New Zealand January, hosted by HomeMades.
