Can't help making Anzac biscuits on Anzac Day. This is the third version to appear on Bake Club. I'm aiming for less and less ingredients each year. This one is all done in the food processor. Takes less than a minute to mix and less than 10 min to bake. You'll be dunking in no time.
This is no.1 of 26 alphabetical bakes! I'm setting myself a challenge to bake something for every letter of the alphabet.

1 c rolled oats
3/4 c desiccated coconut
1/2 c chopped almonds
2 1/2 tbsp honey
2 1/2 tbsp olive oil
1 tsp vanilla extract
1 tbsp water

Preheat oven to 170C. Line a baking tray with baking paper.
Put all ingredients in a food processor (except the water) and blitz for about 30 sec until combined. Add water and mix for another 15 sec until the mixture sticks together when pressed. With wet hands, roll dough into 12 balls and press out onto your baking sheet to about 2-3mm thick. Well, I prefer thinner cookies but choose your thickness.
Bake for 8-10 min, rotating the tray after 5 min and watching carefully. You can see mine are a bit overdone on the edges.
This amount makes one tidy tray, but it's easy to double it if you want to. Store in an airtight container.
