Chestnut kisses

Baking with chestnuts is not a common practice in the Antipodes, it's more a European or Asian thing. I love boiled chestnuts though, and have fond memories of picking them in my childhood. The whole family used to go on a day trip to Cambridge to pick them in the big parks. We wore gumboots and would scrounge around for the perfect stick to help prize open their prickly shells, then stuff the deep brown nuggets into specially made fabric chestnut-picking bags. Smores bars

if you don't have a campfire handy, you can make s'mores bars at home! These were truly delicious and worth the effort making the 3 separate elements.


Crust:

1/2 c wholemeal flour (I used spelt)

1/2 c plain flour (I used spelt)

3 Tbsp brown sugar

1/2 tsp baking powder

1/4 tsp salt

56 g cold butter, cut into cubes

2 eggs, separated


Filling:

250 g dark chocolate

1/2 c almond butter


Marshmallow:

1/3 c granulated sugar

2 Tbsp honey

1/3 c water


Preheat oven to 180C. Line a 20 cm square tin with baking paper.

Black forest whoopie pies

If you feel like a change from slicing up a big cake, whoopie pies are cute transportable mini cakes with their own filling. The classic combo of cherries and chocolate are honoured in these black forest whoopies.


Makes 28-30 singles

175 g softened butter

150 g brown sugar

1 egg

1 tsp vanilla extract

225 g flour

75 g cocoa powder

2 tsp baking powder

150 ml milk

2 Tbsp yoghurt

225 g finely chopped cherries, fresh or tinned

250 g mascarpone cheese, or cream cheese

1/4 c icing sugar or honey

Parmesan palmiers

I've made Parmesan twists before using homemade flaky pastry but puff pastry is even more buttery! For a sweet version make a filling with 100g softened butter, 100g brown sugar and 4 tsp cinnamon.


Makes 24

Puff pastry:

250g butter, frozen for 30 min

250g plain flour

1 tsp salt

1 egg, lightly beaten, for glazing


Filling:

50g Parmesan, grated

1 tsp paprika

50g butter, softened


Grate the butter into a large bowl. Sift in flour and salt and rub together until crumbly.

Rum and raisin cake

Inspired by the ice cream, I really wanted to make a rum-flavoured cake. This is adapted from Nigella's recipe, which uses applesauce. If you don't have applesauce you could use any mashed/stewed fruit or even yoghurt. I omitted her cocoa powder but I'm sure it would be just as nice with it too. Start preparing the cake the day before you want to make it, by soaking the raisins overnight.

Caramel white chocolate blondies

An on-the-fly recipe to use up almond pulp from making almond milk and some failed caramel that split. You can use any flour you wish and if you don't have caramel handy you can omit or marble the top with melted chocolate.

150 g coconut oil (or butter)

1/3 c granulated sugar

1/3 c brown sugar

1 tsp vanilla extract
2 eggs

2 c almond pulp or meal 
1 tsp baking powder

3/4 c white chocolate chips

3/4 c caramel or butterscotch sauce

Butterscotch tart

Another better-for-you treat by Jerrelle Guy that uses more wholesome ingredients than your standard caramel tart. I finally learnt that caramel is traditionally made with white sugar and a small proportion of butter and butterscotch with brown sugar and a higher proportion of butter. There is a difference in flavour, however, I now often make such syrups with coconut cream, coconut oil and coconut sugar so you can have vegan/dairy free versions too.
