This is similar to another banana bread recipe on Bake Club. The additional chocolate drops in this one adds nice melty surprises.

3 ripe bananas, mashed

1 c milk (I used rice)

1/2 c softened coconut oil or neutral oil

1 c coconut sugar

1 Tbsp vanilla extract

2 c flour (I used wholemeal spelt)

1 tsp salt

2 tsp baking powder

1/2 tsp baking soda

1/2 c chocolate drops. optional


Preheat oven to 190C. Line a loaf tin with baking paper.

In a large bowl whisk together the bananas, milk, oil, sugar and vanilla. In a smaller bowl whisk together the flour, salt, baking powder and baking soda.

Fold the dry ingredients into the wet, then stir in chocolate bits if using. Do not overmix.

Pour into your tin, decorate if you wish, and bake for 40-50 minutes until cooked through.

Remove from the oven and let cool in the tin for 20 minutes before transferring onto a wire rack.
