Bliss balls are the easiest cheat sweet. Just bung everything in a food processor and press the button. Start with a base of nuts or seeds, add your dried fruit of choice and bind with sticky sweeteners such as maple syrup, dates, brown rice syrup, or nut butters. It's a good way to use up things that have bene neglected in your pantry.
If you're time constrained or just too lazy to roll into balls, just make into a slice.

200g dried fruit (I used apricots, use whatever mix you like. Get tropical with a mango and pear mix, or a berry mix, or prunes and raisins)
1 c desiccated coconut
1/2 c nuts of choice (I used almonds)
1/4 c pumpkin seeds (or sunflower)
2 Tbsp nut butter of choice
2 Tbsp maple syrup or honey
1/4 tsp vanilla extract, optional
zest of a lemon, lime or orange, optional

150-200g dark chocolate, melted

Line a 20 cm x 20 cm tin with baking paper. Put all the ingredients in a food processor and blitz until combined and dough sticks together when squeezed.
Tip into your tin and press down evenly. Chill in freezer until firm.
Turn out onto a chopping board and cut into your desired shapes. Drizzle with chocolate.
