Makes
24.
200g
softened butter plus extra for greasing
200g
caster sugar
½
teaspoon vanilla essence
1
large egg
225grams
flour
Pinch
of salt
1
teaspoon baking soda
200grams
dark chocolate buttons roughly chopped
Preheat
oven to 180ºC. Grease two baking trays with butter.
Cream
butter, sugar and vanilla essence together until light and fluffy.
Add
the egg and beat well. Sift the flour, salt and baking soda over the mixture
and fold in. Fold in the chocolate buttons.
Roll
the mixture into 24 small balls and place on the baking trays. Space evenly
apart as I found the cookies spread out a lot during cooking.
Bake
for 10- 12 minutes or until crisp and golden on the outside but still soft
inside.
Leave
to cool on the tray for a few minutes then transfer to wire racks to cool.
