Probably the easiest cookies I've ever made! Found on

1/2 c dates
1/2 c dessicated coconut
1/2 c oats
1/2 c almonds (I used almond pulp from making almond milk)
3 Tbs butter or coconut oil
orange juice to bind

Process the dates, oats, coconut and almonds in a food processor until a crumb like texture.
Add cold butter and juice of a small orange and process further to combine. The dough will hold its shape when formed together.
Roll into a log, wrap in cling film and place in fridge to firm up.
If you are pushed for time, simply roll into small balls and flatten onto a baking tray and press with a fork.
Preheat oven to 170C. Once the log is solid, you can easily slice cookies, about 3mm thick.
Place on baking paper on a cookie tray and bake in oven for about 20 minutes - remove when slightly brown. Cool on a wire rack.
Store in an air-tight container for up to 2 weeks.
