When you taste these brownies you'll never guess the secret ingredient - chickpeas! What a great way to get fibre and protein into a sweet treat. It's another sugar-free recipe from I Quit Sugar.

1 1/2 c cooked chickpeas or 1 can drained
1 tsp baking powder
1/4 c coconut oil, softened
2 eggs
1/4 c nut or seed butter
1/3 c cacao powder
2 Tbs rice malt syrup
1 tsp vanilla extract
1/2 c walnuts (or any nuts) for sprinkling

Preheat oven to 180C and line a baking tin or loaf tin with baking paper.
Put all the ingredients except walnuts into a food processor or blender and whizz till smooth. Pour into tin and sprinkle nuts on top.
Bake for 15 min or until an inserted skewer comes out clean. Turn out and cut into shapes.
On the I Quit Sugar website they also recommend sweet potato or pumpkin puree if you don't like chickpeas.
