Here's a banana nut loaf  baked good...

It is not the most beauteous thing to look at, but it is very very simple and healthy and delicious (and a good use for overripe bananas!). I used about 1/3 C sugar instead of 3/4 and it was not super sweet but still nice. It has no butter, so is an excellent dairy-free recipe. But then it is nice eaten with butter!

The recipe is from "A Second Helping: More from Ladies, a Plate" by Alexa Johnston.

Oven to 180C
grease a med-sized loaf tin, line the base with baking paper

Ingredients:
3 ripe bananas
2 eggs
3/4C sugar
2C flour
1 tsp salt
1 tsp baking soda
1/2C walnuts (broken up a big, or brazil nuts)

Mash banana thoroughly, put into a bowl, add the eggs and beat the two together thoroughly, then stir in the sugar. Sift in the flour, salt and baking soda, and mix thoroughly, then add the nuts.
Spoon mixture into the tin, smooth and bake for about 1hr (turn tin around about halfway through for a more even cook).
Turn out to cool after about 5 mins.
