What to make for the school picnic? Something bite size, sweet and healthy - who doesn't love popcorn?

Makes 20 balls

1/4 c popcorn kernels
1/4 c tahini or nut butter
1/2 c rice syrup or honey
1 tbsp coconut oil
1/4 tsp salt
3 tbsp sesame seeds
3 tbsp desiccated coconut

Pop the corn (on stove top or microwave) and put in a large bowl; discard kernels that haven't popped.

In a small saucepan melt the tahini, rice syrup and coconut oil. Let bubble vigorously for a few minutes, remove from heat and stir in salt.

Pour melted ingredients into popcorn and mix to fully coat. Place the bowl in the fridge or freezer for 10 minutes to help set the caramel. Get a small bowl of water handy and a tray lined with baking paper. With slightly damp hands make small popcorn balls about the size of a walnut and place onto the tray. Natural sweetener is not a sticky as using corn syrup or refined sugar so you'll need to really smoosh the popcorn together to make balls.

Once all the balls are done roll half in coconut and half in sesame seeds.

You can add whatever else you'd like to the popcorn - choc chips, diced dried fruit, chopped nuts.

Chill in fridge to harden. Store in an airtight container in the fridge..
