These are like jazzed-up scones straight from Edmonds cookbook. Nice to have a little spice in your scone for a change.

Makes 9
3 c flour
4 tsp baking soda
1/2 tsp salt
75 g butter
1 egg
2 Tbsp honey
1 c milk
1/2 tsp orange essence
1/2 tsp ground ginger

Topping:
preserved ginger pieces
granulated sugar (I used demerara)

Preheat oven to 200C. Dust a baking tray with flour.
In a large bowl mix in the flour, baking powder and salt. Rub in butter. Make a well in the centre and add in beaten egg and honey dissolved in the milk. Add in essence and ginger. Mix with a knife until the dough just comes together.
Tip out onto a floured surface and cut into 9 equal pieces. Shape into balls and place on your tray.
Brush with milk, sprinkle with sugar and place a piece of crystallised or preserved ginger on top.
Bake for 15-18 minutes until just cooked through.
Serve with butter and jam or cream and a comforting cuppa.
