This recipe called these biscuits 'washboards', which I love, but you can shape the dough into circles too. You can replace the lemon with lime or orange. All citrus flavours go well with coconut.

2 tbsp non-dairy milk
1 tsp lemon juice or apple cider vinegar
1/2 tsp baking soda
1/2 c coconut oil, room temperature
1 c unrefined sugar
1 egg or flax egg
1/2 tsp vanilla extract
1 c desiccated coconut
1 tbsp lemon zest
2 c flour (I used spelt)
3/4 tsp baking powder
1/4 tsp sea salt

Preheat oven to 180C. Line 2 baking trays with baking paper.

In a small cup mix milk, lemon juice and baking soda and set aside.

In a bowl cream coconut oil and sugar with an electric beater until smooth. Add egg/flax egg, milk mixture and vanilla and mix to combine. Add the flour, baking powder and salt and mix until just combined. Add 1/2 c coconut and lemon zest and combine.

Put the remaining coconut on a plate.

Divide dough half and divide each half into 16 equal-sized pieces. Roll each piece into an oblong, roll in coconut and place on the tray about 5 cm apart. Flatten each oblong with a fork to form horizontal lines.

Bake for 10-12 minutes. Allow to cool for a few minutes then transfer to a wire rack to cool completely.
