A healthyish biscuit!

50g rolled oats
250g wholemeal spelt flour
1 tsp baking powder
juice and grated zest of 1 orange
60ml extra virgin olive oil
50g unrefined sugar (I used coconut)
2 tbsp honey
pinch salt

Icing:
150g icing sugar
1 tbsp orange juice
1 tbsp orange zest

Grind oats in a coffee grinder or food processor until fine. Mix with flour and baking powder in a large bowl.

In a separate bowl whisk together orange juice and zest, oil, sugar, honey and salt. Pour into flour bowl and mix until a dough forms. Bring together with your hands and form into 2 equal sized discs. Wrap each in cling film and refrigerate for at least 30 minutes until dough is firm.

Preheat oven to 180C. Line 2 baking sheets with baking paper.

Place a disc of dough in between 2 sheets of baking paper and roll out to 3mm thick. Cut into shapes with your chosen cookie cutter and place on your baking tray about 3cm apart. Repeat with the other disc of dough.

Bake for about 12 minutes until golden. Cool on the tray for 10 minutes then transfer to a wire rack. Spread the biscuits with icing once completely cooled.
