How I do love prunes, and they add such sweetness and moistness to cakes and muffins. Keeps you regular too!

1 egg
1 c milk (I used rice)
1/4 c vegetable oil (I used rice bran)
1/4 c honey or brown rice syrup
2 tbsp panela or coconut sugar
2 c flour (I used wholemeal spelt)
2 tsp baking powder
1/2 tsp salt
1/4 tsp ground nutmeg
1 c prunes, diced

Preheat oven to 180C. Line a 12-cup muffin tin with muffin cases

In a small bowl mix egg, milk, oil, sweetener and sugar.

In a large bowl sift in flour, baking powder, salt and nutmeg and mix well. Make a well in the centre and pour in milk mixture and stir gently until fully combined. Fold in prunes, reserving a couple of tbsp for the topping.

Spoon mixture evenly into the muffin tins and sprinkle prunes bits on top.

Bake for 20 min until golden brown and cooked through. Leave in the tins for a few minutes before turning out onto a wire rack to cool completely.
