With the oven still bung I made these wholesome raw cookies in the dehydrator. Dehydrated food sometimes doesn't look the most appetising so I tszujed these up with some white chocolate decoration. This recipe is adapted from The Complete Book of Raw Food (Hatherleigh Press, 2005).

Makes around 30 small cookies
2 c sunflower seeds, soaked for 6-8 hours and rinsed
2 apples, cored
2 bananas
1/2 c dates
1 tsp vanilla extract
1 tsp cinnamon
1 c raisins or cranberries
1 c walnuts, soaked for 6-8 hours and chopped

Process the sunflower seeds, apples, bananas and dates through a juicer using the blank plate or in a food processor until a wet smooth dough forms. Transfer to a bowl and stir in spices, raisins and walnuts.
Shape into small balls and flatten out and place on Teflex sheets in your dehydrator. Dehydrate at 40C for 4-6 hours then turn cookies over, remove the sheet and dehydrate for a further 4-6 hours until you get the consistency you like. Decorate with icing or chocolate.
