This is from the Ceres Organics cookbook. Nicely moist and spicy and sweet!
500g prunes, seeds removed and halved
200ml yoghurt
1/2 c rice syrup (or another sweetener of your choice, or about 80g sugar)
100g honey
200ml extra virgin olive oil
4 eggs
300g spelt flour
1 tsp baking soda
2 tsp cinnamon
2 tsp mixed spice or all spice
1 tsp ground nutmeg

Heat oven to 180C. Line a large cake tin with baking paper.
In a small bowl mix 300g of the prunes and yoghurt. Set aside.
In a large bowl blend rice syrup, honey, oil and eggs with a wooden spoon. Stir in flour, baking soda and spices. Mix. Add prunes soaked in yoghurt and fold just to combine.
Pour into tin. Arrange remaining prunes on top.
Bake for at least 30 min or until a skewer inserted comes out clean. Using my 20cm round tin it was quite a high cake and took about 50min to bake through. Remove from the oven and cool in pan before serving.
Delicious with a dollop of cream or yoghurt, or serve warm with vanilla ice cream.
