Very straightforward recipe to make these crowd pleasers. I quickly whipped up a batch to have for after school. White chocolate - the kid's favourite; macadamias - mine.


Makes 12

110 g butter or non-dairy spread

1/2 c caster sugar

1/4 c soft brown sugar

1 tsp vanilla extract

180 g flour

1 tsp baking soda

1 Tbsp milk of choice

50 g white chocolate, roughly chopped (use dairy-free if going vegan), plus 2 Tbsp for topping

50 g macadamia nuts, roughly chopped (or cashews), plus 1 Tbsp for topping


Preheat oven to 180C. Line 2 baking trays with baking paper.

In a large bowl cream the butter/spread, sugars and vanilla, either by hand or with a handheld electric mixer.

Sift in flour and baking soda and mix with a spoon or spatula. Stir in milk then add the chocolate and nuts and bring the dough together.

Divide equally into 12 pieces, rolled in balls. Place on your trays well spaced apart. Sprinkle over toppings and press down to flatten slightly.

Bake one tray at a time in the centre rack for 10 minutes. The centres may still be soft but let cool on the trays to harden.
