A little bit spicy and a little bit nutty! Just what you need for your afternoon dunk. This is a variation on my very easy vegan digestives. You can experiment with any nut or seed flours, add zest or other spices. Go crazy.

1/2 c sunflower seeds, ground in a coffee grinder
1 c flour (I used spelt)
1 tsp baking powder
1/2 tsp salt
2 tsp ground ginger
1/2 c chopped pistachios
1/2 c coconut sugar, ground in a coffee grinder
1/4 c coconut oil
5-8 tbsp non-dairy milk

Preheat oven to 180C. Line a baking tray with baking paper.

Mix all the dry ingredients in a food processor until combined. Then add coconut oil and blitz until combined. On a slow rotate gradually add the milk 1 tbsp at a time until the dough starts to form. You may not need all the milk.

Tip out onto a clean surface and roll into a ball. Roll out between 2 sheets of baking paper to 4mm thick. Cut into shapes and place onto your baking trays. They don't need much room to spread.

Bake for 8-10 min, rotating trays halfway. Leave to cool on the trays for a few minutes before transferring to a wire rack to cool completely.
